Enjoy this great fiber-filled salad over spinach for a complete meal.
Ingredients:
1 15-ounce can great northern beans, drained and rinsed well
1 15-ounce can lower sodium black beans, drained and rinsed well
1/2 cup chopped red bell pepper
1/2 cup chopped yellow or orange bell pepper
3 tbsp rice wine vinegar
3 tbsp Dijon mustard
2 tbsp olive oil
2 tbsp chopped fresh sage or 2 tsp dried
2 tbsp chopped fresh mint or 2 tsp dried
Salt and pepper to taste

12 cups fresh spinach
Directions:
1 In a large bowl, combine beans and bell peppers.
2 In a small bowl, combine the remaining ingredients and whisk together until well blended.
3 Pour dressing over beans and toss gently. Refrigerate until well chilled. Serve over 3 cups of fresh spinach per serving.
