Tired of pasta with red sauce? Try this refreshing alternative! Tortellini combined with vinaigrette, mozzarella and veggies make for a great main dish.
1 9 oz package refrigerated cheese tortellini
1 cup frozen artichoke hearts (or 1 15 oz can artichoke hearts, drained and chopped)
2 large tomatoes, chopped
1 yellow bell pepper, chopped
½ cup fresh basil, chopped
1 oz fresh mozzarella, finely chopped
1 tablespoon olive oil
4 tablespoons vinegar (such as balsamic or red wine)
Black pepper to taste
1 Cook tortellini according to package directions. During the last few minutes of cooking, add frozen artichoke hearts.
2 Drain and rinse in cool water. Place in a large bowl.
3 Add remaining ingredients, tossing gently to coat. Allow to chill in refrigerator for flavors to merry.
4 Serve over a bed of spinach or with grilled chicken, shrimp or tofu.
