This crisp, light and flavorful salad makes a refreshing and colorful lunch. Great way to use leftover chicken!
Ingredients:
1 pound chicken breats, grilled and chopped
4 1/2 cups Chinese cabbage, sliced
4 1/2 cups Romaine lettuce, sliced
1 cup snow peas
1 red bell pepper, thinly sliced
1/2 cup shredded carrots
2 green onions, sliced
1/2 cup pineapple tidbits
Directions:
1 Combine all ingredients in a large bowl and toss gently.
2 Serve with 1-2 tablespoons light vinaigrette of choice (try soy-ginger!).
3 ENJOY!
