A delicious peanut stir-fry is an incredibly and easy way to add a burst of color to your day and your health!
Ingredients:
1 tbsp sesame or olive oil
6 cups assorted veggies: cauliflower, red bell peppers, mushrooms, broccoli, carrots, green onions, garlic and purple cabbage
12 oz skinless chicken breast, cut into cubes
¼ cup finely chopped peanuts
2 tbsp lite soy sauce
2 tbsp rice vinegar
2 tsp sugar
¼ tsp red pepper flakes
Directions:
1 Heat oil in a large non-stick skillet or wok over medium-high heat. Add vegetables and stir-fry 3-4 minutes. Add chicken and stir-fry until chicken is cooked through, about 5 minutes.
2 Combine soy sauce, rice vinegar, sugar and red pepper flakes. Add peanuts and soy sauce mixture to stir-fry. Stir-fry for 2 minutes or until vegetables are crisp-tender and mixture is heated through.
3 Serve over steamed brown rice or soba noodles.
