This chilled vegetable and corn mixture is delicious served with barbequed chicken or fish. Or, enjoy as a snack with a corn tortilla.
Ingredients:
1 cup chopped celery
1 cup corn
1 can (16 ounces) stewed Mexican style tomatoes
2 Tablespoons chopped red pepper
2 Tablespoons chopped green pepper
2 Tablespoons red wine vinegar
1/2 teaspoon garlic powder
1/2 teaspoon ground cumin
1 tablespoon fresh chopped cilantro
1/8 teaspoon black pepper
Crushed red pepper to taste
Directions:
1 Combine ingredients and mix well. Serving Size: 1/2 cup.
