Minestrone couldn't get any easier! You'll have this on the table in no time - ready for the family to enjoy.
16 ounces frozen vegetables, any type
30 ounces canned, low-sodium stewed tomatoes
28 ounces low-sodium vegetable broth
15 ounce can kidney beans
1 teaspoon Italian seasoning
1 cup small pasta, dry
1 In a large pot, combine frozen vegetables, tomatoes, seasoning, broth and beans.
2 Bring the soup to a boil and add the pasta. Then reduce to low heat. Let simmer for 6-8 minutes or until the pasta and vegetables are tender.
