Tired of chicken tostadas? Try shrimp! This recipe is easy, fast and delicious! Top with mango, papaya or pineapple salsa for a yummy sweet n’ spicy twist.
2 corn tortillas
¼ C fat free refried beans
¼ cup light cheese, shredded
2 C romaine or dark leaf lettuce
½ C bay shrimp
Lime juice (fresh) and crushed red pepper to taste

Garnish ideas: salsa, green onion, avocado, non-fat or light sour cream
1 Heat tortillas in broiler or in toaster oven until crisp.
2 Drizzle lime juice over shrimp and add red pepper to taste. Heat shrimp in a small non-stick frying pan until cooked through, about 3-5 minutes.
3 Spread tortillas with beans and sprinkle with cheese.
4 Top with lettuce and shrimp. Garnish with salsa, green onion and a small amount of avocado and non-fat or light sour cream if desired.
