Salmon is a nice and healthy alternative to beef in shepherd's pie. Use fresh fish if you prefer and feel free to experiment with the type of veggies.
Ingredients:
1 can (14 3/4 ounce) low-sodium salmon
2 cups frozen mixed vegetables, thawed
1 teaspoon garlic powder
1/4 teaspoon black pepper
2 cups cooked mashed potatoes (low-fat)
Paprika (optional)
Directions:
1 Drain the salmon, keeping 2 tablespoons of liquid.
2 Mix the salmon with the vegetables, spices and the salmon liquid.
3 Place the salmon mixture in a 1-quart baking dish.
4 Spread the mashed potatoes over the top of the salmon mixture.
5 Bake at 350 until heated through.
6 ENJOY!
