Shrimp and scallops are naturally lean and cook very quickly. Add some vegetables and you have an ideal meal!
Ingredients:
1 teaspoon olive oil
1 cup cauliflower florets
1/2 cup red bell pepper, sliced
1/2 cup green bell pepper, sliced
1/2 cup yellow bell pepper, sliced
1/2 pound shrimp, peeled and deveined
1/2 pound scallops
1/4 cup low sodium vegetable broth
Juice of 1 lemon
Balck pepper to taste
Directions:
1 Spray a large skillet with cooking spray. Add olive oil and heat over medium-high heat.
2 Add cauliflower and stir-fry for about 2 minutes. Add bell peppers and stir-fry another 2 minutes.
3 Add shrimp and cook for 2 minutes. Add scallops and continue cooking until shrimp turn pink and scallops turn white.
4 Add broth and lemon juice and heat until warm.
5 Serve over brown rice or whole wheat pasta.
6 ENJOY!
