Liven up your turkey dinner with this healthy, savory stuffing. Lean sausage makes this recipe much lower in fat than most sausage stuffings.
8 cups cubed day-old corn bread
2 cups cubed day-old whole wheat bread
1 pound lean or extra lean sausage (ground or chopped link)
1 yellow onion, chopped
1 celery stalk, chopped
1 tablespoon fresh chopped sage
1 tablespoon fresh chopped thyme
1 tablespoon fresh chopped rosemary
3 cups low-sodium chicken broth
Black pepper to taste
1 Preheat oven to 375. Spread bread cubes on a baking sheet coated with cooking spray; toast in the oven until golden, about 20 minutes. Set aside.
2 In a non-stick skillet over medium heat, brown sausage until cooked through. Transfer to large bowl.
3 Return pan to medium heat. Saute onion and celery until soft. Add to bowl with sausage. Stir in bread, herbs, broth and pepper.
4 Tranfer to a baking dish, cover with foil and bake 35-40 minutes. Remove foil; bake until browned, 35-40 minutes more.
