	    	           Roasted potatoes are simply delicious.  Serve them with steamed veggies and your favorite roasted meat or grilled salmon.

| 1 | Preheat oven to 425 degrees. Combine oil and herbs in a bowl. Toss new potatoes in the oil and place in a baking dish. | 
| 2 | Season with salt and pepper. Roast potatoes for 40-45 minutes until tender, turning occasionally. |
