Serve this refreshing cold soup before dinner to add veggies and tons of flavor!
4 tomatoes, peeled, seeded and chopped
2 cucumbers, peeled, seeded and chopped
5 green onions, diced
2 green peppers, seeded and chopped
1 large yellow pepper, seeded and chopped (can use any color peppers)
6 cloves garlic, crushed using garlic press
Combine tomatoes, cucumbers, peppers, basil and garlic in food processor (leave 1 green onion for garnish).
Process using chopping blade until smooth. Place in large bowl.
Add olive oil, vinegar and tomato juice. Season to taste.
Refrigerate before serving. Garnish with chopped green onion. Makes 8 1 cup servings.
