Serve this refreshing cold soup before dinner to add veggies and tons of flavor!
Ingredients:
4 tomatoes, peeled, seeded and chopped
2 cucumbers, peeled, seeded and chopped
5 green onions, diced
2 green peppers, seeded and chopped
1 large yellow pepper, seeded and chopped (can use any color peppers)
6 cloves garlic, crushed using garlic press
Directions:
1 Combine tomatoes, cucumbers, peppers, basil and garlic in food processor (leave 1 green onion for garnish).
2 Process using chopping blade until smooth. Place in large bowl.
3 Add olive oil, vinegar and tomato juice. Season to taste.
4 Refrigerate before serving. Garnish with chopped green onion. Makes 8 1 cup servings.
