This simple soup only takes minutes to assemble and you'll come home to an aromatic and delicious meal.
Ingredients:
1 lb dry Great Northern beans
4 cups water
4 cups low sodium vegetable broth
3 Tbsp olive oil
2 garlic cloves, minced
4 Tbsp chopped parsley
Directions:
1 Place beans in large soup pot, cover with water and bring to boil. Cook 2 minutes, remove from heat. Cover pot and allow to stand for 1 hour. Drain, discarding water.
2 Combine beans, 4 cups fresh water, and vegetable broth in slow cooker.
3 Saute garlic and parsley in olive oil in skillet. Stir into slow cooker. Cover and cook on low for 8-10 hours or until beans are tender.
