Baby carrots are the ultimate healthy fast food! This recipe slow cooks them with brown sugar, orange juice and spices.
32 oz (2 lbs) pkg baby carrots
1/2 cup brown sugar
1/2 cup orange juice
3 Tbsp butter
3/4 tsp cinnamon
1/4 tsp nutmeg
2 Tbsp cornstarch
1/4 cup water
1 Combine all ingredients except cornstarch and water in slow cooker. Cover and cook on low for 3-4 hours until carrots are tender.
2 Place carrots in serving dish. Pour reserved carrot juices into saucepan and bring to boil. Mix cornstarch and water in small bowl and add to saucepan.
3 Boil until thickened, stirring constantly. Pour over carrots and serve.
