This salad features a magnificent display of colors and is just as appetizing as it looks!
8 cups mixed greens
1 kiwi, sliced
1 blood orange, peeled and cut into chunks
1/4 of jicama, peeled and cut into thin strips
2 tablespoons pine nuts
1 cup sliced strawberries
2 green onions, sliced
1 Combine all ingredients in a large bowl. Serve with your favorite low-fat dressing.
