This French Onion soup is marvelous and it's healthy! This rich broth-like soup is complemented by toasted bread and Parmesan cheese.
Ingredients:
1 tablespoon light margarine or spread
1 medium onion, thinly sliced
5 1/2 cups water
5 teaspoons low sodium beef bouillon granules
1/2 teaspoon Worcestershire sauce
3 slices crusty French bread
3 tablespoons shredded Parmesan cheese
Directions:
1 Melt margarine in a medium saucepan over low-heat. Add onion, cover and cook for 20 minutes or until lightly browned, stirring occasionally.
2 Add water, bouillon and Worcestershire, stirring well. Cover and bring to a boil. Reduce heat and simmer for 10 minutes.
3 Top each slice of bread with 1 tablespoon of parmesan and toast until cheese is melted. Place 1 bread slice on top of each serving of soup.
4 ENJOY!

Why so much fat?

You only need the merest scrap of olive oil on the bottom of you pan to brown the onions.
