This protein and fiber rich salad makes a filling and tasty main dish. Try using leftovers for lunch the next day!
Ingredients:
1 cup, uncooked lentils
2 cups, water
1 cup, canned cannellini beans, rinsed and drained
1 cup, canned cut green beans, rinsed and drained
1 medium onion, minced
1/2 cup, celery, thinly sliced
1/2 cup, chopped red bell pepper
1/2 cup, chopped green bell pepper

Dressing:
1/4 cup, vinegar
1/4 cup, sugar
1/4 tsp, sesame seed
1/8 tsp, salt
1/8 tsp, black pepper
1 tsp, low sodium soy sauce
Directions:
1 Place lentils and water in a large saucepan; bring to a boil. Cover, reduce heat, and simmer 20 minutes or until tender. Do not drain. Cool slightly.
2 Place lentils, cannellini beans, green beans, onion, celery, and peppers in a bowl. In a separate bowl, combine dressing ingredients.
3 Pour dressing over vegetables. Toss gently, cover, and refrigerate overnight. Serve.
