Ingredients:
2 cups fresh broccoli florets
1 tbsp olive oil
1 tablespoon minced garlic
1 cup chopped tomatoes
3 tablespoons nutritional yeast
4-4oz boneless chicken breasts, cooked and chopped
salt to taste
ground black pepper to taste
1 box Whole wheat pasta
Directions:
1 Blanch broccoli florets in a medium size saucepan, remove with slotted spoon. In same pan saute the minced garlic in the olive oil for 2 minutes. Add the chopped tomatoes and set aside.
2 In a large bowl toss blanched broccoli, cooked chicken, and garlic/tomato mixture. Add nutritional yeast, salt, and ground black pepper and mix well.
3 Cook pasta according to package directions, serve over pasta.
4 ENJOY!
