Pasta doesn't have to always come with red sauce! Asian inspired ingredients make this pasta dish tasty, healthy and easy to prepare.
Ingredients:
2 cups fresh snow peans
1/2 cup carrots, sliced thinly
1 cup red bell pepper, sliced thinly
1 cup sliced mushrooms
1 green onion, sliced
2 tablespoons lite soy sauce
8 ounces whole grain pasta such as penne
1 tablespoon finely chopped or ground peanuts
Directions:
1 Cook pasta according to package directions.
2 In a non-stick skillet sprayed with cooking spray, stir-fry vegetables over medium heat until tender-crisp.
3 Add soy sauce and pasta. Toss and heat for a few minutes. Sprinkle with peanuts.
4 ENJOY!
