Ingredients
  • 1 15-ounce can great northern beans, drained and rinsed well
  • 1 15-ounce can lower sodium black beans, drained and rinsed well
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped yellow or orange bell pepper
  • 3 tbsp rice wine vinegar
  • 3 tbsp Dijon mustard
  • 2 tbsp olive oil
  • 2 tbsp chopped fresh sage or 2 tsp dried
  • 2 tbsp chopped fresh mint or 2 tsp dried
  • Salt and pepper to taste
  • 12 cups fresh spinach

Instructions
  1. In a large bowl, combine beans and bell peppers.
  2. In a small bowl, combine the remaining ingredients and whisk together until well blended.
  3. Pour dressing over beans and toss gently. Refrigerate until well chilled. Serve over 3 cups of fresh spinach per serving.
