Ingredients - 1 15-ounce can great northern beans, drained and rinsed well
- 1 15-ounce can lower sodium black beans, drained and rinsed well
- 1/2 cup chopped red bell pepper
- 1/2 cup chopped yellow or orange bell pepper
- 3 tbsp rice wine vinegar
- 3 tbsp Dijon mustard
- 2 tbsp olive oil
- 2 tbsp chopped fresh sage or 2 tsp dried
- 2 tbsp chopped fresh mint or 2 tsp dried
- Salt and pepper to taste
- 12 cups fresh spinach
Instructions - In a large bowl, combine beans and bell peppers.
- In a small bowl, combine the remaining ingredients and whisk together until well blended.
- Pour dressing over beans and toss gently. Refrigerate until well chilled. Serve over 3 cups of fresh spinach per serving.
