Ingredients - 3 cups fresh spinach leaves
- 5 cherry tomatoes
- 1/4 cup red onion, sliced
- 1/4 cup fresh mushrooms, sliced
- 2 tablespoons dried cranberries
- 3 tablespoons chopped almonds
- 3 tablespoons feta cheese
- 3 ounces grilled or baked chicken
Instructions - Combine spinach, mushrooms, tomato and onions in a bowl. Crumble feta cheese over top and sprinkle with cranberries and almonds.
- Slice the cooked chicken and place on top of the salad.
- Serve with a light raspberry vinaigrette or your favorite low-fat dressing.
