Ingredients - 2 cups water
- 1 cup quinoa
- ½ cup chopped dried apricots
- 1 can garbanzo beans, drained and rinsed
- 3 green onions, sliced
- 1-2 garlic cloves, minced
- 2 tbsp olive oil
- Juice of 1 lemon
- 2 tbsp chopped fresh thyme
- Salt and pepper to taste
- 2 tbsp slivered almonds
Instructions - Prepare quinoa according to directions. Let stand for 5 minutes and fluff with a fork; let cool.
- Whisk together remaining ingredients except almonds; stir into quinoa. Cover and chill for one hour or more. Sprinkle with almonds.
- Serve with barbequed chicken, pork or fish.
