Ingredients
  • 2 cups water
  • 1 cup quinoa
  • ½ cup chopped dried apricots
  • 1 can garbanzo beans, drained and rinsed
  • 3 green onions, sliced
  • 1-2 garlic cloves, minced
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 2 tbsp chopped fresh thyme
  • Salt and pepper to taste
  • 2 tbsp slivered almonds

Instructions
  1. Prepare quinoa according to directions. Let stand for 5 minutes and fluff with a fork; let cool.
  2. Whisk together remaining ingredients except almonds; stir into quinoa. Cover and chill for one hour or more. Sprinkle with almonds.
  3. Serve with barbequed chicken, pork or fish.
