This salad makes a great protein rich main meal as an alternative to meat.
Ingredients:
2 cups cooked lentils
2 cups cooked brown rice
1/2 cucumber, chopped
1 tomato, chopped
1 small jalapeno, chopped (optional)
1/2 cup chopped grean or white onion
1 tablespoon cilantro, chopped
1/4 cup seasoned balsamic vinegar
Directions:
1 In a large bowl, combine all ingredients until well mixed.
2 Allow salad to chill or enjoy it right away!
3 ENJOY!
