Treat yourself like a king or queen today with this elegant yet easy to make salad. Chicken, pistachios, grapes and goat cheese are a truly delicious combo!
Ingredients:
2 cups mixed greens
3/4 cup grapes
1/2 cup sliced red onion
2 oz sliced, cooked chicken breast
2 tbsp crumbled goat cheese (or blue cheese)
1 tbsp pistachios
2 tbsp light balsamic vinaigrette

1 whole grain dinner roll
Directions:
1 Combine lettuce, goat cheese, grapes, pistachios and red onions.
2 Dizzle with dressing and top with chicken. Serve with a whole grain dinner roll.
3 ENJOY!
