Ingredients - 8 oz cooked chicken breast, cut into chunks
- 1 cup shredded carrots
- 1 cup chopped red bell pepper
- 1 cup roasted or frozen corn (thawed)
- 2 green onions, sliced
- 1 teaspoon garlic powder
- ½ teaspoon black pepper
- 2 tbsp plain yogurt
- 2 tbsp low-fat mayo
Instructions - Combine all ingredients and mix well.
- Serve in a lettuce leaf, whole wheat pita, whole grain tortilla or whole grain bread.
- Top with lettuce, spinach and tomatoes.
