Ingredients
  • 8 oz cooked chicken breast, cut into chunks
  • 1 cup shredded carrots
  • 1 cup chopped red bell pepper
  • 1 cup roasted or frozen corn (thawed)
  • 2 green onions, sliced
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • 2 tbsp plain yogurt
  • 2 tbsp low-fat mayo

Instructions
  1. Combine all ingredients and mix well.
  2. Serve in a lettuce leaf, whole wheat pita, whole grain tortilla or whole grain bread.
  3. Top with lettuce, spinach and tomatoes.
