This salad is full of bright colors and bold flavors that make a wonderful side dish or salad starter.
Ingredients:
1 cup sliced red bell pepper
1 cup sliced green or yellow bell pepper
1 cup sliced and peeled cucumber
½ cup sliced red onion
3 small tomatoes, sliced
2 tbsp fresh mint, chopped
3 tbsp fresh cilantro, chopped
Juice of one lemon
2 teaspoons olive oil
salt and black pepper to taste
1/4 cup feta cheese
Directions:
1 Combine all ingredients except feta cheese and toss well to coat. Sprinkle each serving with 1 tablespoons feta cheese. Enjoy as a side dish or starter!
