Looking for zesty, tasty dish to replace rice, potatoes or pasta? Beans combined with corn, red peppers and spices go well with grilled chicken, steak or fish!
Ingredients:
1 15-ounce can low sodium black beans, drained
½ cup frozen yellow corn, thawed
1 red bell pepper, diced
1/4 cup chopped cilantro
2 garlic cloves, minced
Juice of 1 lime
Chopped jalapeno or red pepper flakes to taste (optional)
Directions:
1 Combine all ingredients in a large bowl and toss to mix. Cover salad and chill to allow flavors to merry.
2 ENJOY!
