These mashed potatoes are delicious- the combination of roasted garlic and fresh rosemary makes them irresistible! Try these with our Peppercorn Steak recipe.
1 pound Red potatoes, quartered
1/4 cup bottled roasted garlic cloves, chopped
1 tbsp olive oil
1 tbsp fresh Rosemary
1/2 cup non-fat milk
salt and pepper to taste
1 Place potatoes in a sauce pan, cover with water and boil for about 15 minutes, drain.
2 Heat milk until warm in a pan (do not boil), add potatoes, olive oil, milk and garlic and beat on medium until smooth (or, desired consistency).
3 Add salt and pepper to taste and stir in Rosemary.
4 Yield: about 2.5 cups. 1/2 cup = 1 serving.
