Lentils are a great alternative to beans and make a great cold salad. You're sure to enjoy this blend of fiber-rich lentils, veggies and herbs!
2 cups cooked lentils (try a mix of green and orange)
1/2 cup diced celery
1 yellow bell pepper, chopped
1 red bell pepper, chopped
1 tomato, chopped
1/4 cup chopped Italian parsley
1 tablespoon stone ground mustard
1/2 cup reduced fat Italian dressing
1/4 cup sliced green onions
1 In a large bowl, combine lentils through parsley and mix well.
2 In a small bowl combine Italian dressing and mustard, whisk well.
3 Toss lentil mixture with salad dressing mixture. Garnish with green onions.
4 Serve as a side dish or over a bed of spinach with a whole grain dinner roll for a main meal.
