Making your own spice blends is a great way to use all of those spices in your spice rack! Use this in Indian recipes and add at the end of cooking.
1 tablespoon cumin seeds
1 tablespoon coriander seeds
2 teaspoons black peppercorns
12 cardamom pods
8 whole cloves
1 2-inch cinnamon stick, broken into pieces
1/2 teaspoon ground nutmeg
1 Place cumin, coriander, peppercorns, cardamom, cloves and cinnamon in a skillet over medium-high heat.
2 Cook until spices start to smoke and become aromatic. Constantly shake skillet for about 5 minutes then stir in nutmeg.
3 Remove from heat and let cool completely.
4 Place toasted spices in a spice or cleaned out coffee grinder and grind until finely ground.
5 Store in an airtight container. Suggested uses: Use as a spice rub over your favorite meats like chicken, pork, beef or seafood.
6 Yield: 1/4 cup. Serving Size: 1 teaspoon.
