Have you noticed that more and more restaurants are featuring this favorite soup on their menu? This version is low in fat yet very tasty!
1 stalk celery – finely diced
1 small onion – finely diced
2 cups broccoli – fresh or frozen; chopped
1 cup cauliflower – fresh or frozen; chopped
3 cups low-sodium vegetable or chicken stock
Pinch of black pepper
1/2 cup non-fat yogurt
1/4 cup low-fat cheddar cheese
1 Put broccoli, cauliflower, onion and celery and in a medium sized pot.
2 Add stock and salt and pepper and bring to a boil. Reduce heat and cook until vegetables are very soft.
3 Do not drain. With a hand blender, puree the vegetables in the pot.
4 Add the yogurt and cheese to the pot, stirring until well blended and cheese is melted.
