If you have extra canned corn and veggies on hand - give this hearty salad a try. It has almost every color of the rainbow!
Ingredients:
1 can (12 ounce) drained whole kernel corn
1 can (14 1/2 ounce) drained carrots
1 can (14 1/2 ounces) drained green beans
1 can (14 1/2 ounces) ounces tomatoes - chopped
1 Tablespoon finely chopped onion
1 Tablespoon finely chopped green pepper
1/3 cup tomato juice from canned tomatoes
3 garlic cloves, minced
2 tablespoons olive oil
1/3 cup red wine vinegar
2 Tablespoons sugar
1/8 teaspoon black pepper
Directions:
1 Drain tomatoes. Save 1/3 cup of the liquid.
2 Mix corn, carrots, green beans, tomatoes, onion, and green pepper in a large bowl.
3 Mix together all other ingredients in a separate bowl. Pour over vegetables.
4 Cover and let aside at least 3 hours in the refrigerator. Serving Size: 1/2 cup.
