Get ready to branch out and try something other than tofu or veggie burgers! Tempeh is wonderful soy product that has a meaty and firm texture.
Ingredients:
1 package tempeh
1/4 cup plain low-fat yogurt
1 tablespoon chipotle paste (or more to up the spiciness)
1/2 tsp crushed garlic
1 teaspoon coriander
1/2 teaspoon cumin
1 celery stalk, chopped
1/4 cup corn (frozen or no salt added canned)
1/4 C bell pepper, chopped
Lite soy sauce, about 2 teaspoons
Directions:
1 Spray a frying pan with cooking spray and heat over medium-high heat. Crumble tempeh and cook until lightly browned.
2 In a medium bowl, combine tempeh through bell pepper.
3 Drizzle Bragg Liquid Aminos or lite soy sauce over mixture and mix well.
4 Allow to chill or serve right away. Serve over mixed greens or with whole grain crackers.
5 ENJOY!
