This cabbage soup is flavorful and low-calorie. Try a bowl before a meal or for a mid-afternoon snack.
Ingredients:
1 lb cabbage, finely shredded
4 celery stalks, sliced
4 carrots, sliced
1 onion, chopped
2 vegetable bouillon cubes, low sodium
2 garlic cloves, minced
1 qt low sodium tomato juice
4 cups water
Directions:
1 Combine all ingredients in slow cooker. Cover and cook on high for 3-4 hours or under vegetables are tender.
