Yogurt helps lighten the calories and fat in this cabbage salad that is full of colorful and crunchy vegetables.
Ingredients:
4 cups shredded or thinly sliced cabbage
1/4 cup grated or finely sliced carrots
1/4 cup thinly sliced celery
1/4 cup chopped green pepper
1 teaspoon finely chopped onion
1 tablespoon fresh chopped parsley
2 garlic cloves, minced
1/2 cup mayonnaise, light or low-fat
1/2 cup plain fat-free yogurt
1 teaspoon mustard
1/2 teaspoon lemon juice
1/2 teaspoon sugar
Directions:
1 Combine vegetables and herbs in a large bowl.
2 Mix mayonnaise, yogurt, mustard, lemon juice, and sugar in a small bowl. Blend well. Add to vegetables.
3 Mix well. Keep in refrigerator until ready to eat.
