Ingredients:
2 cups all purpose flour
1/4 cup of sugar
3/4 teaspoon baking soda
1/2 teaspoon salt
3 large, very ripe bananas, mashed well (about 1 1/2 cups)
1/4 cup plain yogurt
2 large eggs, lightly beaten
1 teaspoon vanilla extract
Directions:
1 Adjust oven rack to lower middle position and preheat oven to 350 degrees. Spray Pam in a large loaf tin and lightly dust with flour.
2 Whisk flour, sugar, baking soda and salt in a large bowl; set aside.
3 Use a spoon to mix mashed bananas, yogurt, eggs and vanilla in another bowl.
4 Lightly fold banana mixture into dry ingredients until batter looks thick and chunky. (Don't over-mix or your loaf will be tough and rubbery).
5 Scrape batter into loaf tin, and bake for about 55 minutes, until a toothpick inserted in the center comes out clean. Cool in the pan for at least 5 minutes and serve warm or at room temperature. Cut into 8 slices and cut those in half to make 16 pieces
