Forget the high-fat take out. You can make your own healthy version right at home in just a few minutes!
Ingredients:
1 pound pork tenderloin, cut in 1/2-inch cubes
1 tsp chopped garlic
1 C low-sodium chicken broth
1 tsp lite soy sauce
1 green bell pepper, cut in strips
2 C sliced celery
1/2 cup sliced carrots
1/2 cup sliced red onion
1 8 oz can pineapple tidbits, packed in juice
2 tbsp cornstarch
reserved pineapple juice
Directions:
1 Spray a skillet with cooking spray. Brown pork with garlic.
2 Add chicken broth, soy sauce, green pepper, carrots, onion and celery. Cover and simmer for 10 minutes.
3 Meanwhile, drain the pineapple, reserving the juice. Blend cornstarch with reserved pineapple juice and add to the skillet.
4 Cook, stirring constantly, until mixture thickens. Add pineapple and heat thoroughly. Makes 4 cups.
5 ENJOY!
