Ingredients - 1 skinless, boneless chicken breast half
- salt and pepper to taste
- 2 tablespoons nutritional yeast
- ½ cup frozen chopped spinach, thawed and drained
- 1 clove garlic, minced
- 1 egg, beaten
- 1 cup low sodium chicken broth
Instructions - Preheat oven to 350 °F.
- Season chicken breasts with salt and pepper to taste. Slit open on the side for stuffing; set aside.
- In a medium bowl, combine the nutritional yeast, spinach, garlic and eggs. Mix well and stuff chicken breast with the mixture; secure with toothpick and place stuffed breast in a lightly greased 9x13 inch baking dish. Pour chicken broth over chicken.
- Bake at 350 °F for 45 to 60 minutes, or until chicken is cooked through and juices run clear
