Ingredients
  • 1 skinless, boneless chicken breast half
  • salt and pepper to taste
  • 2 tablespoons nutritional yeast
  • ½ cup frozen chopped spinach, thawed and drained
  • 1 clove garlic, minced
  • 1 egg, beaten
  • 1 cup low sodium chicken broth

Instructions
  1. Preheat oven to 350 °F.
  2. Season chicken breasts with salt and pepper to taste. Slit open on the side for stuffing; set aside.
  3. In a medium bowl, combine the nutritional yeast, spinach, garlic and eggs. Mix well and stuff chicken breast with the mixture; secure with toothpick and place stuffed breast in a lightly greased 9x13 inch baking dish. Pour chicken broth over chicken.
  4. Bake at 350 °F for 45 to 60 minutes, or until chicken is cooked through and juices run clear
