This is not your average meatloaf! It's healthy, full of flavor and very easy to make. Serve with roasted potatoes and steamed veggies for a magnificent meal!
Ingredients:
Meatloaf:
1 1/2 pounds lean ground turkey (not ground turkey breast)
1 egg
1 medium onion, grated
1/2 cup seasoned breadcrumbs
1/2 can condensed low-fat, low-sodium tomato soup (such as Campbell's Healthy Request)
Salt and pepper to taste

Sauce:
Remaining 1/2 can condensed tomato soup
3/4 cup water
2 tablespoons brown sugar
2 tablespoons Best Foods/Hellmann's Dijonnaise or other creamy dijon spread
Directions:
1 Preheat oven to 350 degrees.
2 Mix all meatloaf ingredients, form into small loaf and place in baking pan sprayed with nonstick cooking spray.
3 Mix sauce ingredients in separate bowl and then pour over meat loaf.
4 Bake for one hour. Yield: 6-8 servings.
