Ingredients
  • 1 small zucchini, sliced lengthwise into 1/4-inch slices
  • 1/4 cup sliced red onion
  • 1/2 tomato, sliced
  • 1/2 red bell pepper, seeded and quartered
  • 1 teaspoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon oregano
  • black pepper to taste
  • 3 tablespoons hummus
  • 1 whole wheat pita bread

Instructions
  1. Combine vegetables in a medium bowl; drizzle with olive oil and sprinkle with garlic powder, oregano and pepper. Toss gently.
  2. Grill vegetables on a lightly greased grill rack (cooking spray works well) over medium heat until browned, about 5 minutes.
  3. Spilt pita in half and spread hummus inside of each pocket. Divide cooked vegetables evenly into each pocket.
  4. If you do not have an indoor or outdoor grill, a George Foreman grill or broiler will work.
