Ingredients - 1 small zucchini, sliced lengthwise into 1/4-inch slices
- 1/4 cup sliced red onion
- 1/2 tomato, sliced
- 1/2 red bell pepper, seeded and quartered
- 1 teaspoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon oregano
- black pepper to taste
- 3 tablespoons hummus
- 1 whole wheat pita bread
Instructions - Combine vegetables in a medium bowl; drizzle with olive oil and sprinkle with garlic powder, oregano and pepper. Toss gently.
- Grill vegetables on a lightly greased grill rack (cooking spray works well) over medium heat until browned, about 5 minutes.
- Spilt pita in half and spread hummus inside of each pocket. Divide cooked vegetables evenly into each pocket.
- If you do not have an indoor or outdoor grill, a George Foreman grill or broiler will work.
