Ingredients - 1/2 cup diced ripe avocado
- Juice of 1 lime
- 1 package frozen petit peas (16 ounces), thawed
- 1/2 cup chopped cilantro
- 1/4 cup sliced green onion
- 1 teaspoon crushed garlic
- Hot pepper sauce to taste
- Salt and pepper to taste
- 1 medium tomato, chopped
Instructions - Combine avocado and 1 tbsp lime juice in a medium bowl.
- Combine peas, green onion, garlic, remaining lime juice and cilantro in a food processor or blender and puree until smooth.
- Add avocado and tomato and stir gently to combine. Season to taste wit hot pepper sauce, salt and pepper.
- Serve as an appetizer or snack with baked chips or whole grain crackers and cut-up veggies!
