Ingredients
  • 1/2 cup diced ripe avocado
  • Juice of 1 lime
  • 1 package frozen petit peas (16 ounces), thawed
  • 1/2 cup chopped cilantro
  • 1/4 cup sliced green onion
  • 1 teaspoon crushed garlic
  • Hot pepper sauce to taste
  • Salt and pepper to taste
  • 1 medium tomato, chopped

Instructions
  1. Combine avocado and 1 tbsp lime juice in a medium bowl.
  2. Combine peas, green onion, garlic, remaining lime juice and cilantro in a food processor or blender and puree until smooth.
  3. Add avocado and tomato and stir gently to combine. Season to taste wit hot pepper sauce, salt and pepper.
  4. Serve as an appetizer or snack with baked chips or whole grain crackers and cut-up veggies!
