|1||Combine flour and 1/2 of the egg substitute; beat well on low speed.|
|2||Add remaining egg substitute and beat 3-5 minutes. Add lemon zest, cinnamon and margarine.|
|3||Gradually stir in enough milk until batter has the consistency of thin cream.|
|4||Allow batter to sit 2 hours. Spray a small skillet with cooking spray and heat over medium heat.|
|5||Pour 1/4 cup batter in skillet, tilting skillet so that batter coats surface evenly.|
|6||Pour any excess batter into the bowl. Cook crepe until lightly browned on bottom, about 1 minute. Turn and brown other side.|
