Flounder is naturally low-fat and when served with white wine, lemon and parsley - it's simply magnificent! Serve with brown rice and asparagus.
3 tbsp fresh lemon juice
1/4 cup dry white wine or vermouth
1 1/2 tsp lemon pepper
1 garlic clove, crushed
3 tbsp fresh chopped parsley
4 6-ounce flounder fillets
1 Preheat oven to 400 degrees.
2 Combine lemon juice, white wine, lemon pepper, garlic and parsley in a small bowl.
3 Place flounder in one layer in a shallow glass baking dish. Spread lemon mixture evenly over the fish and bake for 15 minutes, or until fish flakes easily with a fork.
