What is Valentine's Day without chocolated covered strawberries? Surprise your sweetheart with these low-fat but decadent chocolate strawberries.
Chocolate Sauce:
¾ cup sugar
1/3 cup unsweetened cocoa powder
4 tsp cornstarch
2/3 cup evaporated skim milk
1 tsp vanilla or rum extract

Strawberries, rinsed
1 Mix together sugar, cocoa powder and cornstarch. Add mixture and evaporated milk to a small saucepan.
2 Heat over medium heat, stirring constantly until sauce is thick and bubbly. Cook for 2 more minutes, remove from heat and stir in vanilla.
3 Dip the ends of the strawberries into warm sauce, coating about half. Place sections on a baking sheet lined with wax paper. Refrigerate for about 15 minutes or until chocolate sets.
4 Serving size (not including strawberries): 1 tablespoon chocolate sauce.
