Ingredients
  • 2/3 cup whole wheat flour
  • 1/2 cup egg substitute
  • 3/4 teaspoon lemon zest
  • 4 teaspoons light margarine or spread
  • 1 cup non-fat milk
  • Pinch of cinnamon

Instructions
  1. Combine flour and 1/2 of the egg substitute; beat well on low speed.
  2. Add remaining egg substitute and beat 3-5 minutes. Add lemon zest, cinnamon and margarine.
  3. Gradually stir in enough milk until batter has the consistency of thin cream.
  4. Allow batter to sit 2 hours. Spray a small skillet with cooking spray and heat over medium heat.
  5. Pour 1/4 cup batter in skillet, tilting skillet so that batter coats surface evenly.
  6. Pour any excess batter into the bowl. Cook crepe until lightly browned on bottom, about 1 minute. Turn and brown other side.
