Ingredients - 2/3 cup whole wheat flour
- 1/2 cup egg substitute
- 3/4 teaspoon lemon zest
- 4 teaspoons light margarine or spread
- 1 cup non-fat milk
- Pinch of cinnamon
Instructions - Combine flour and 1/2 of the egg substitute; beat well on low speed.
- Add remaining egg substitute and beat 3-5 minutes. Add lemon zest, cinnamon and margarine.
- Gradually stir in enough milk until batter has the consistency of thin cream.
- Allow batter to sit 2 hours. Spray a small skillet with cooking spray and heat over medium heat.
- Pour 1/4 cup batter in skillet, tilting skillet so that batter coats surface evenly.
- Pour any excess batter into the bowl. Cook crepe until lightly browned on bottom, about 1 minute. Turn and brown other side.
