Baked tofu over fresh, nutrient-rich arugula is a quick and healthy meal any day!
Ingredients:
3 ounces flavored tofu (such as Whitewave or Soy Deli), sliced or cubed
4 cups arugula leaves
1 teaspoon olive oil
Fresh lemon juice
Directions:
1 Grill, bake or broil tofu until heated through.
2 Serve over arugula leaves. Squeeze fresh lemon juice and drizzle olive oil over greens.
3 ENJOY!
