Ingredients
  • 1 head lettuce, chopped
  • 3 tomatoes, seeded and chopped
  • 1 small jicama, chopped
  • 1 can white corn (no salt added), drained and rinsed
  • 1 can black beans (50% less sodium), drained and rinsed
  • Fresh cilantro, chopped
  • 12 oz. chicken grilled with barbecue sauce (about 3 tbsp), chopped
  • Lime Wedges

Instructions
  1. Combine all ingredients in large mixing bowl.
  2. Immediately before serving, toss lightly with a low-fat dressing over your choice and squeeze lime over salad.
