Ingredients - 1 head lettuce, chopped
- 3 tomatoes, seeded and chopped
- 1 small jicama, chopped
- 1 can white corn (no salt added), drained and rinsed
- 1 can black beans (50% less sodium), drained and rinsed
- Fresh cilantro, chopped
- 12 oz. chicken grilled with barbecue sauce (about 3 tbsp), chopped
- Lime Wedges
Instructions - Combine all ingredients in large mixing bowl.
- Immediately before serving, toss lightly with a low-fat dressing over your choice and squeeze lime over salad.
