Seitan is a high protein, low-fat meat substitute made from wheat. It's versatile and firm texture works well in this savory fajita recipe.
Ingredients:
Fajitas:

1/3 cup seitan (such as Whitewave or Lightlife), cut into strips
1/4 teaspoon dried oregano
1/2 medium onion, sliced
1/2 red bell pepper, sliced
1 green onion, sliced
1 teaspoon olive oil
1/8 cup low sodium vegetable broth
1 large (10-12 inch) high fiber tortilla

Sauce:
1/4 cup non-fat plain yogurt
1/4 avocado
1 teaspoon lime juice
1 tablespoon chopped cilantro
Directions:
1 Saute seitan in 1/2 teapsoon olive until browned, about 6 minutes.
2 In a seperate pan, saute onions in remaining olive oil for 5-6 minutes.
3 Add garlic, red pepper and oregano; saute for a few minutes.
4 Stir in seitan and broth and simmer until red pepper is tender, about 3 minutes. Add green onion and pepper to taste.
5 Combine sauce ingredients in a blender and process until smooth.
6 Place fajita mixture into a warmed tortilla and top with sauce.
7 **Tofu or tempeh may be substituted for seitan.**
8 ENJOY!
