Ingredients - 4 cups whole grain pasta, cooked
- 1 15 ounce can of drained and rinsed cannellini or other white beans (choose lower sodium)
- 1 cups fresh tomatoes, chopped
- 2 cups fresh spinach leaves
- 1-2 tablespoons chopped garlic
- 2 teaspoons Italian seasoning
- Black pepper to taste
- 4 tablespoons Parmesan cheese
Instructions - Combine beans, tomatoes, garlic, herbs and spinach in a non-stick skillet. Cook over medium heat until heated through and spinach wilts.
- Serve over cooked pasta and sprinkle with parmesan cheese and black pepper to taste.
