White beans combined with pasta is an Italian staple and a good one at that! Try this savory combination of pasta, beans, herbs, fresh tomatoes and spinach.
Ingredients:
4 cups whole grain pasta, cooked
1 15 ounce can of drained and rinsed cannellini or other white beans (choose lower sodium)
1 cups fresh tomatoes, chopped
2 cups fresh spinach leaves
1-2 tablespoons chopped garlic
2 teaspoons Italian seasoning
Black pepper to taste
4 tablespoons Parmesan cheese
Directions:
1 Combine beans, tomatoes, garlic, herbs and spinach in a non-stick skillet. Cook over medium heat until heated through and spinach wilts.
2 Serve over cooked pasta and sprinkle with parmesan cheese and black pepper to taste.
3 ENJOY!
