If you've never tried melon this way - you must give this recipe a try! Serve it as a breakfast drink or chilled soup.
Ingredients:
2 1/2 cups cubed honeydew melon
2 1/2 cups cubed casaba melon
1/3 cup fresh squeezed lime juice
1/4 cup non-fat plain yogurt
1 teaspoon honey
Fresh mint leaves
Directions:
1 In a food processor or blender, puree all ingredients except mint leaves. Chill thoroughly and garnish with mint.
2 ENJOY!
